White pepper comes from the same tree as black pepper, from the Piperaceae family. Ripe red peppercorns are picked at full maturity and soaked in basins of rainwater to rid them of their envelope and then dried for a very long time in the sun. This stripped heart of pepper is white pepper. With a more subtle and sweeter taste than black, Muntok white peppers from Indonesia, Kampot (Cambodia) and Sarawak (Malaysia) are very popular. White pepper, like other peppers, has many well-known virtues in Ayurvedic medicine: It stimulates the production of saliva which predigests food while reducing acidity in the mouth, thus protecting the teeth. It increases the secretion of hydrochloric acid in the stomach to aid in the breakdown of food. It promotes the secretion of gastric juices helping digestion. It would stimulate the production of endorphins thanks to piperine* (active compound of pepper), which can help fight against a depressive state. It stimulates the appetite (ordemanding power). Finally, pepper has sneezing properties, that is, it causes sneezing, thus clearing the airways.
